Mocha chip cookies
Ingredients
- 1.75c flour
- 1/4c cocoa powder
- 1t baking powder
- 1/2t baking soda
- 1t cornstarch
- 1/4t salt
- 1/2c melted butter
- 1/2c sugar
- 1/4c brown sugar
- 1 large egg
- 4T instant coffee
- 1T hot water
- 1c chocolate chips
Instructions
- Whisk together flour, cocoa, baking powder, baking soda, cornstarch, salt, and 2T instant coffee.
- In a separate bowl, whisk the butter and sugars, then add the egg.
- Dissolve 2T instant coffee in the hot water, add to the wet ingredients, and mix.
- Add the dry ingredients, mix, and fold in the chocolate chips.
- Roll the dough into balls, bake at 350F for 10 minutes.

Pro tip: do not bake all of the cookies! Instead, freeze the dough balls and keep a stash handy. That way you can always pop a few out and partially-cook them in a toaster over whenever the urge strikes you. Melty and delicious!
