Mocha chip cookies

Ingredients

  • 1.75c flour
  • 1/4c cocoa powder
  • 1t baking powder
  • 1/2t baking soda
  • 1t cornstarch
  • 1/4t salt
  • 1/2c melted butter
  • 1/2c sugar
  • 1/4c brown sugar
  • 1 large egg
  • 4T instant coffee
  • 1T hot water
  • 1c chocolate chips

Instructions

  1. Whisk together flour, cocoa, baking powder, baking soda, cornstarch, salt, and 2T instant coffee.
  2. In a separate bowl, whisk the butter and sugars, then add the egg.
  3. Dissolve 2T instant coffee in the hot water, add to the wet ingredients, and mix.
  4. Add the dry ingredients, mix, and fold in the chocolate chips.
  5. Roll the dough into balls, bake at 350F for 10 minutes.

Comments:

Pro tip: do not bake all of the cookies! Instead, freeze the dough balls and keep a stash handy. That way you can always pop a few out and partially-cook them in a toaster over whenever the urge strikes you. Melty and delicious!
