Greek turkey meatballs over couscous

Ingredients

Meatballs:

  • 1lb ground turkey
  • 1/4c minced red onion
  • 1/4c panko bread crumbs
  • 1t garlic
  • 1 egg
  • 1t (heaping) oregano
  • 1t (scant) cumin
  • half a lemon of lemon zest
  • some salt and pepper

Couscous:

  • 1c Israeli couscous
  • 1.25c water
  • 1 pint cherry tomatoes
  • 3oz feta
  • half a lemon of lemon zest
  • half a lemon of lemon juice
  • sprinkle of oregano
  • sprinkle of basil
  • 1 glug olive oil
  • some salt and pepper

Instructions

  1. Preheat oven to 400F
  2. Mix meatball ingredients, and form into 16-18 meatballs (about 1.25 to 1.5 inches in size)
  3. Bake for 18 minutes, flipping once halfway through.
  4. Cook the couscous in the water, then add to all other ingredients. Add the meatballs, serve and enjoy!

Comments:

Note that this recipe is endlessly adaptable! Do you feel more like orzo than couscous? Prefer a lamb meatball to turkey? Go to town!
