Coconut-Mango Chicken

Ingredients

    Chicken:
  • 1 chicken breast
  • 1 egg
  • 1 splash milk
  • 1/2c panko
  • 1/2c coconut flakes
  • 1 bell pepper
  • 1T shallot
  • 1 handful green beans
    Sauce:
  • 1 mango
  • 1 dried chili
  • 1T rice vinegar
  • 2.25t soy sauce
  • 1T fish sauce
  • 1/2 juiced lime
  • 1/2T brown sugar
  • 1.5 cloves garlic
  • 1/8t turmeric
  • 1/2 lime zest
    Rice:
  • 1/2c rice
  • 14oz light coconut milk

Instructions

  1. Cook the rice using the light coconut milk. (Makes sense)
  2. Saute the veggies -- feel free to play around with the vegetable mix, here.
  3. Cut chicken into bite-sized pieces, dip into a mixture of 1 egg beaten with a splash of milk, then dip into a mix of the panko and coconut flakes.
  4. Bake chicken for 20 minutes at 400 F.
  5. Make the sauce by blending all of the ingredients together.
  6. Serve and enjoy!
